Dumplings!

MY MOM IN LAWS DUMPLINGS

Sometimes all you need is a little bit of comfort on a plate or in a bowl. Something that heats you up and warms the soul. I love stews and casseroles for this. Fortunately my kids do too especially if it’s topped with rich, buttery, crisp pastry or these….my mother in laws recipe for Dumplings. These have a gorgeous sconey texture and crisp up beautifully on the top while soaking all the rich savoury juices from the stew beneath. I do keep an eye on my stew and keep it quiet juicy before I add these as they can soak a lot of the gravy. I have tried a few others but I will never again wander from this one as it is the best I have ever tasted, and as my husband says “his mothers is best”….how lucky am I to have four sons to sing that mantra about me at their kitchen tables!!!!!

Ingredients:

Directions:

  1. Fry the breadcrumbs slowly in the butter until golden brown, put on a plate.
  2. Sieve together the flour, salt and pepper, and garlic salt, add oil and milk and mix to a soft dough,
  3. Drop tablespoons of this dough into the buttered crumbs and roll into balls.
  4. Arrange on top of your stew of choice and return uncovered to the oven for 45 mins until topping is golden brown.
